Notes

Fine chop and toast about 10 lbs. sugar pumpkin @ 320 degrees until it turns a golden brown and edges slightly caramelized. (2 hours?) Mash the toasted pumpkin @ 150 degrees for 90 minutes. (18 quarts water dough in @ 160 degrees) Use the pumpkin wort as strike water for the main mash.
Adjust main mash strike water and or calculations as needed for desired mash schedule.
