1. City water measured at pH 7.08 (8:15am)
2. Added 180ml of phosphoric acid (8:20am)
3. Measured at pH 3.28 (8:55am)
4. Adding 200L city water for total of 1800L (8:58am)
5. Measured at pH 3.44 (9:05am)
6. Dumping 800L to get to 1000L total volume, then refill to volume 1600L (9:12am)
7. City water measured at pH 7.00 (9:24am)
8. Measured at 5.08 at vol. 1600L
9. Reduced to 1480L, then adding 320L city water to get to 1820L total (target remains at pH 5.8).
10. Measured at pH 6.03 (9:40am)
1. Strike Temperature was 70C. Too high. Reduce to 68C next brew.
2. Add acid at mash, around 50ml at a time.
-pH consistently at around 5.5 at start of mash and 20 minutes in.
