Had to add blow-off tube this morning because the fermentation started very quickly last night. Foam everywhere! I couldn't find the oxygen wand last night so I didn't even aerate this wort, though it did get jostled around quite a bit on drive home from Les' place. Fermentation is at full activity with tons of bubbles in the blow off receiver. Likely due to not waiting until wort got below 50F. |

Fermentation is noticeably slower today, likely due to a drop in temperature to near 50. Still going strong though. |

Turned out very clean with little acetaldehyde or fruitiness, which is surprising given the high initial temps (due to massive ferm activity). Flavor is very malty initially, with a strong bitterness at the end with spicy and herbal Noble hop presence in the finish. I think this might be a bit too bitter, so hopefully, this will drop some with age. This should be very nice in about 6 months, and considering this is basically a Doppelbock, that would be perfect for Lent. |
