areated wort for about 5 minutes and dumped a mostly decanted 3 liter starter of WLP-099 super high gravity into wort. the US-05 was at high krausen already. |

Smelled sour, but tasted fine. Hopefully this will get below 1.030 for FG. Will let it go another 3 days and check the SG again to see where it is at. If it is stable, I will probably rack to secondary and add the whisky chips. |

Added two handfuls of jack daniels chips that were soaked in Heaven Hill bourbon for 2 months. Didn't add the bourbon. Racked to secondary keg for long term conditioning. |
