Notes

Boiled approx 5.75 gallons. Brew pot was rather full. Yield was 5.25 gallons. Topped up to 5.5.

Used (2) packets of yeast, re-hydrated at 86 degrees. Pitched at 71. Will raise temp after active fermentation starts. Set Thermostar to 74 with 2 degree Hysteresis.

Added all Honey at flame out.
