Cane sugar is not the most common type of sugar used in brewing, but it can be called for in certain recipes. It's slightly more complex than corn sugar, and is sometimes used in its place to boost ABV or for priming. 

Acidulated Malt is typicall used at 1 to 10% to lower mash and wort pH. Great for brewing pilsner with soft water and also recommended for hefeweizen mashes.
