With an intense malt aroma and unique brewing characteristics it has a high degree of modification of both proteins and starches, excellent friability, low ß-glucan values, and high acidity. Melanoidin malt adds a deep amber to red-brown color to your finished beer. With rich malt flavor having notes of honey and biscuit, Melanoidin malt is best used in dark or red-colored beers such as amber ales, Scottish ales, Irish red ales, bocks, and Kellerbier.

Product Description

Wyeast Weihenstephan Weizen 3068 is a highly versatile yeast strain used to ferment primarily wheat beers. With a balanced combination of banana esters and clove phenolics you can bring out the banana flavors you're after by increasing the fermentation temperature, increasing the wort density, and decreasing the pitch rate. 
Alternately,decreasing the ester level will allow a higher clove character to come through your final product. 
Sulfur, or egg smells are commonly produced, but will alleviate with conditioning. 
This strain will remain in suspension for an extended amount of time following attenuation causing a clouded or hazes appearance to your beer as it ferments. That's completely natural. This is true top fermenting yeast and requires additional fermenter head space of at least 33%. 
For best results keep your fermentation temp as close to 68°F as possible.
