Germany and Poland both use if for what's called a Grodziskie (Grätzer beer) or similar styles. With a fine smoked aroma and taste, it can also be used in European Wheat Ales.

A generally slow fermenting yeast, Wyeast Kölsch 2565 has it's origins in a top fermenting yeast from Cologne, Germany. Wyeast Kölsch 2565 produces little to no diacetyl meaning you won't end up with a buttery beer.
