I brew with extracts due to time constraints and my newness to brewing in general. I did just get a small, 30qt gas turkey fryer setup though, so I'm anxious to get that going and step things up a little. I had previously used an electric range for steeping, boiling, etc, and the time and energy used for that was tedious. I bottle at this point but would love to step up to a dual keg system in the future.
I really like to drink beers according to the season, so I've got my recipes set up so that I can have a brew schedule that allows me to rotate beers throughout the year. Some, like my IPA, are a little more resistant to the calendar changes, but I have a Rauchbier that'll be for Fall, a stout for the Winter, Porter specifically for Christmas, and so on. At one point I avoided hop-forward beers but I have since fallen hard for them. I don't want to be overly aggressive with the bitterness, but I love the aromas and flavors from more of the late-addition hops, particularly dry hopping. I also like to experiment with styles and techniques that are not necessarily true to the standard, like brewing an IPA/lager hybrid.
