Notes: Update: 4/3/2019 - For the pomegranate, I added 12oz of 100% pomegranate juice. Beer is absolutely delicious. I won 2nd place in the western Idaho fair home brew competition with a wee-heavy. Notes: Dry Hop first batch at 4 days into fermentation. Gravity reading around 1.035-38. Re rack into another secondary after 8 days and finish fermentation for 5 more days. Priming sugar and bottle after 5 day dry hop is finished. 3 weeks to open.
Add 4g. 1 tsp Calcium Sulfate and 9g Calcium Chloride to post mash and sparge.
On mash, after 45 minutes rinse grains with 1 gallon 170' water.
Add malt. Bring to boil. 60 min. |

Notes: Make starter 2 days in advance of brew day, by dissolving 8oz DME (3oz 10L, 3.5oz 4L, 1.5oz 2L) in 2000mL boiling water, then chilling to <80F and pitching 2 packs WYEAST 1272 into 2 mason jars; aerate and cover loosely with tin foil, stirring with sanitized utensil periodically
Mash grains used Water adjustment for 60 mins.
After draining grain bag and sparge/rinse, add boiling water to bring kettle to 4.5 gals, and begin 75 min boil.
After 15 min, add
1 lbs 14.5 oz DME
After 45 min, add
1.25 oz Chinook
After 60 min, add
3 lbs DME
3 oz fresh Glacier
1 tsp Irish Moss
After 65 mins, add
0.5 tsp yeast nutrient
After 75 mins (flameout), stop boil and chill to 70
Aerate wort and add up to 1 gal pre-boiled/chilled water to achieve OG (target 1.057 for 4.5 gals)
Pitch yeast sediment and aerate, ferment at 68F
After ~1 week (FG achieved), add dry hops for another 7 days
(consider racking over to 6.5gal fermenter to get off yeast, with drop hops at bottom)
bottle to 2.5 vols CO2 (using 3.6oz of corn sugar for 4.5 gals), boiled for 5 mins in 2 cups water

Notes: Using Sainsbury's own cheap cornflakes at 45p / 500g Half of one bag of Brewing sugar (£1.60) and some porridge oats. This is the sort of recipe you could make in prison.... not that I'm going to try it there. Just an experiment to see what could be done.
Hops = £2.39 (expensive but tasty Citra) Yeast = £2.99.
Total = £ 8.78 for 20 pints = 44p / pt. |

Notes: depending on how strong you want your ending ale to be you can add corn sugar. 8-16oz.
1 lb will make it pretty strong without detracting from the overall flavor profile.
I suggest letting this age in bottle for at least a couple months for full flavor but it can be kegged and drank within a couple weeks.
it took me a looooong time to figure this one out! |

Notes: started brew day at 8:43AM on 11/18/16. The day went well with the heating timing targets reached. it took 24 minutes to reach 155 degrees.
16 minutes to reach boil. 2-3 burner marks for 155 degrees 4.25 for boil. Burner off at 10:53. Primary ready at 11:00 finished cleanup at 11:18. I put the primary into a 40 degree garage for 2 hours sprinkled the yeast on top and placed it in the utility room where it has averaged 61.8 degrees. I transferred it to the secondary on 11/22 it was too early with the cool temperature. had a gusher for two days. will keep the next batch in the primary for 7 days instead. bottled on 12/9 I dissolved the DME for priming in a pint of boiled water, put it out side in 5 degree temp for a half hour then stirred it into the batch. we'll see if that solves the carbonation issue as I was having trouble with the DME dissolving in the wort. conditioned at 60.9 degrees. it worked well! |
