31L of strike water to 70 degrees
Add water additions
Mashed in, temp @ 66.6 degrees \m/
Set timer to 60 mins
@30 mins stirred mash, temp was 65.6 degrees
@60 mins, temp was 64.9 degrees
Raised to 78 degrees for 20 min mashout
Set to boil and lifted gain bag to drain
Pre boil volume at ~29L (165mm)
Pre boil gravity at 1.046 (well over expected)
Need post boil volume of 28.5L to be at 1.047
Once boiling set timer for 60mins
At 15mins added first hop addition, whirlfloc and yeast nutrient
Dropped in immersion chiller and 1tsp of yeast nutrient for 15 mins
Turned off kettle, pre boil gravity at 1.054, volume at 24.5L
Chilled to 70 degrees
Added whirlpool hops for 30 mins
Chilled to ~30 degrees
Decided to add 3L of water to dilute closer to desired OG
Transferred to FZ, final temp was about 28 degrees
25L in the fermenter, OG at 1.052
Pitched yeast (from previous starter, fermenter temp set to 19.5 degrees)
No blowtie for first 2-3 days
Blowtie attached and set to ~10psi
DRY HOP
Dry Hop on Day 4/5 (within 10 points of FG)
Day 8 - Took sample, gravity at 1.011 (~77% attenuation), raised FC to 22 degrees, will start cold crash in 24 hours, attach gas to serving pressure.
Day 11 - Add 2 dry hop to keg, transfer to keg

I threw this recipe together in about 5 minutes just to test a 10 gallon boil kettle I bought off of Craigslist. I happened to be in my LHBS ordering 10 lbs of pilsen when I turned around and they had a whole stack of Avangard Pilsen in 10 lb bags already milled for $0.75/lb !!! 75 cents a pound???!!! Yeah, I'll take that thanks. heheh I should have bought it all.
Since that is a German malt, I figured add some German hops. Grabbed those and brewed it. Boom. I was NOT prepared for the absolute crap-ton of dregs in the bottom of my fermentor though. (about two inches deep!) I found out after the fact that BIAB does cause a lot of trub. So right after that I built a mash tun. LOL
Anyway... this is a nice light "biscuitty" beer. Tastes similar to a Stella. I did brew this again as I got back to my LHBS and picked up the last bag they had of Avangard Pilsen. Almost completely identical to the BIAB, except you get more beer because there's less trub/sludge/dregs left in your fermentor. You may get a little more flavor if you add a 1/2 lb of Vienna or something, but as is it's a pretty nice light beer. Very easy drinker. Cheers! |

♦ SESSION NOTES: Brew Your Own called for WLP833 German Bock Larger. Phantom had WLP838 Southern German Lager Yeast. Recipe was set for 1.070 but ended up with 6 gallons.
**Ferment for 3 weeks in the primary, before racking, pull it out of the fridge and let it warm to room temperature for 2 days (dialectal rest). Rack it, and leave it around 36F for 4-6 weeks for the lagering phase.
I then keg it, force carbonate, and after about 3 months it is ready to drink. The beer tastes strange when it is green. It really needs the extra time to settle down. Be patient with it, but it is worth it!**
This yeast is characterized by a malty finish and balanced aroma. It is a strong fermentor, produces slight sulfur, and low diacetyl. Apparent attenuation: 68-76%. Flocculation: medium--high. Optimum temp: 50°-55° F
♦ Yeast Starter
♦ STANDARD BREWING NOTES: BIAB
♫Create 8.5 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose.
Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
•Fitter Hoppier AG - American IPA
WAKE UP!!!!!!
15 minutes – Add Immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
