Yesterday's brew already at high krausen, went ahead and dry hopped it. At the rate it's going, I'll be bottling in a week. Started working up a recipe called "Project XXX", sense I am delusional enough to think that someday I'll get out of construction and have a little brewpub, trying to work out what Dad would call a "milk check" cow...that ugly one on the far end of the barn that gives enough milk to cover the fancy ones that look pretty.

I think that saison I used S-33 on yesterday might already be done. It was going nuts last evening and climbed upwards of 25C from 17C on its own and is now sitting around 21C. Never used that yeast before so it's gonna be interesting to try.

Kegged an ESB today. That Fullers yeast drops like a rock. Weird stuff. Smells dreadful. Sample tasted okay, a little estery. Now on to conditioning for a month, then we will taste it against a Fullers ESB.

Was thinking about using sugar to carb in the keg for my Saison, but with how hard it's been to find sugar my wife my kill me if I take her bread making stash.
Hoping to get parts from the LHBS this week, might buy a kilo or two of DME from them for this purpose.

Was in our local supermarket this morning - old fart hour. Looked like stocks were coming back for everything except toilet paper and some cleaning supplies.

Sugar and flour have been low here, not crazy bad but weirdly low so I am playing it safe.

We have been saving spent mash for flour. Bread and pizza dough have been good. Pretzels are next up.

Bottled up some leftover beer from Covid Skare transfer yesterday.

And nervously await kick start confirmation to a fermentation thats not mine...
I gave a new brewer some Hornindal Kviek Slurry Talked it up saying how quick it takes only to get MSG this morn that no action on the air lock observed. I said give it till this arvo if not change pitch rest of slurry and should be good. Told brewer to just lift lid this arvo after no air lock confirmation only for him to discover a half formed Krausen.

Never trust Air lock Activity for active fermentation eh;).

Racer 5 fermentation has slowed to a crawl, so will be dry hopping today with Cascade, CTZ, Centennial and Chinook. Gotta love them C hops. Hoping to get this one crashed and in a keg by the middle of next week.
