So I've taken a few cracks at making a Ninkasi Total Domination Clone: This one was not very close at all, and not a very bitter IPA: http://www.brewersfriend.com/homebrew/r ... lone-fail- This is much closer, and a really nice IPA on the flora side, but still not there yet: http://www.brewersfriend.com/homebrew/r ... good-beer- I think what I need to do is add a touch of Simcoe to the hop profile, and scale back the Amarillo and Crystal hops by maybe 30%. I was going to play with adding a half pound of Melanoidin malt, perhaps some Caraamber, and substituting to a darker Munich malt (Caramunich III).
Ah yes, Amarillo with Summit or Simcoe dry hop would make a nice finishing touch on this recipe. I have so many things going on I usually skip dry hopping. I have also noticed the impact of dry hopping fades after a couple months, but my IPA seems to disappear in a short period of time. I'll give that a shot!
