Honey saison

    trying a one gallon batch, 1.5 gallon boil size. (just for the fun of it)
    But when do I put in the Honey? Is it in the mash with the grains or put in somewhere else in the brewing process?
    1.9 lb philsner castle
    .5 lb honey gambrinus
    .5 lb Honey
    .8 oz strisselspalt at 60 min
    .8 oz strisselspalt at 1 min.
    wyeast-french saison 3711 yeast

    I would add the honey with 5 minutes left in the boil.

    Alternate, if you're willing to pasteurize the honey, is add it to secondary. It'll ferment and give you a the strongest honey flavor that way.
