I am starting to do low carb recipes using glucoamylase (also known as amyloglucosidase).

Is it possible to incorporate the calculation for the effect of the enzyme on the recipe results. Need a place to add.

It converts starch to sugar. Not sure what it does for low carb
 
Since it makes unfermentable sugars fermentable, could you adjust the attenuation for the yeast to account for the additional sugars that would be consumed by the yeast? For instance, if a yeast normally has an attenuation of 80%, could you override that and make it 99%? You would need to brew some test batches to determine what the adjustment would be. Just a thought.
