I have settled on this recipe for next week and thought I would get some feedback. Let me know what you think. The total batch size will be 5 gal, with about 30% wine juice. The IBU calculation is high because the it does not consider the wine.

Let me know if you see any problems or have had experience doing this.

Not sure why you think it "does not consider" the sugar/ABV contribution of the grape juice. You're checked the late addition box so it calculates based on that, but the calculator wouldn't ignore it.
I don't have any confidence in the current configuration of the calculator as regards IBUs and Volume/FG projections (when I simply copy your recipe and open it for editing, the IBU is different) but you're brewing a pretty bitter beer.
And I'm not sure why you think it'll be "Brut"...1.011FG is pretty typical range for attenuation.
I'd be interested in hearing how it turns out.
