Any thoughts? Doing a 2.5 gallon batch. Contemplating some oak chips/tequila which I get sounds strange...

M41 - Belgian Ale yeast
OG - 1.080
FG - 1.011????
9.3% ABV
Start at 64F and raise 2F every 24 hours until reaching 82F
