So I took my first stab at culturing yeast from a bottle. I used a couple bottles of Rochefort 8. Lo and behold, the yeast came to life. I plan to use it in a 10 % + ABV recipe and am not sure how many times I should step up the starter. I don't have a microscope to do a cell count, so does...
