    Wheat beer and No Head

    It also helpswith wheat, to keep your mash at 52 Celsius (125 Fahrenheit) for 15-20 minutes. It helps with good proteins and does a lot for head. :) But dont overdo it, more than 30 minutes on this temp can be bad for the head too.

    Too long in secondary?

    I don't want to go any lower, but it doesn't stop. :) What should I do? Just bottle it now with less priming sugar? ( I usually use 9 g corn sugar/litre, what do you think, will 6 g make it this time?)

    Today my reading was 1.007. It went down in 4 days from 1,008 to 1,007. Does this count still fermentation? (It bubbles 1 in exry 2-3 minutes)

    Golden strong ale not dry enough

    I seems a possibility to me, that your yeast killed itself with the alcohol level and left some unfermented sugar in there. This seems to be 9% already, and my usual yeasts can't make more than 8-9% ABV. What kind of yeast did you use?
