    That must be why bud lit is one of the most popular beer. Just teasing. I like brewing a clean pilsner as well as a funky sour to me it is another level of brewing. Controling a wild fermentation is a challenge for sure.

    You can do two boils or split your recipe to two brew days and combine at bottling. Easiest thing is top off like mentioned above or get a bigger pot. All grain is so much cheaper than extract you will soon be able to afford that pot

    IMO way to much dark malt.l looks like a Porter. I make a roggenbier that's very popular and my percentages look like yours but I use only .5 %chocolate malt. I think I would stay away from the roasted malt. not familiar with the hops your using but I use Amarillo for what it's worth

    Holding the haze is the key. I've been playing around with my recipe as mentioned above. It does eventually clear. I use no finings and put a flaked oats in the mash. Sometimes I'll cheat and give the keg a little shake. If you bottle just don't decant. It's a fun and tasty style
