    Dry Yeast Brewers, I have two packets of dry yeast that have an expiration date of 9/2018. I know dry yeast has a pretty long shelf life, but is that getting too close to the expiration date to use?

    J_A is right... if you dump "extra" volume after the boil, you losing gravity points in the lost volume; hence a lower efficiency.

    Main reason to use the new White Labs yeast packs. Wonderful fermentations from all packs i've used so far. Usually starts in 4-6 hours, and hit target gravity in 3-4 days.
