    DownSlope Distillery 5 gallon barrels

For those that are in Colorado. I just got word that Rocky Mountain Barrel Company will be getting some 5 gallon barrels from Downslope distillery soon. I purchase one of these before and currently have a Barleywine aging in it and I think its going to be one of the best beers I've ever made...

    Flanders Red

It sill looks about the same as before, except now there's a line white film on top. I think its just now starting to sour. :D I won't try it again for a while but I did add some oak shards that soaked in some red wine in there. Starting with .5oz right now and if it isn't enough I'll add...

    Whiskey Barrel options?

Thanks for the input. I got the barrel from Rocky Mountain Barrel Co.. They are local to me so I stopped by the shop and they just happened to have a few 5 gallon whiskey barrels available. The barrels were used by DownSlope. The best part was Crooked Stave's storage area was right next door...

    Flanders Red

Update: Appearance - very clear and may have lost a bit of the red color since I last checked it but it still has a nice reddish brown color. Aroma - Reminds me of a Flander's red. :D Lots of dark cherries and a small amount of funk coming through and a bit a sourness in the nose as well...

    Whiskey Barrel options?

I've recently picked up a 5 gallon whiskey barrel and trying to decide on what to put in it first. Eventually I'm going to be putting sours in it but I"m not sure if I should start that way right off the bat or not. I don't know if the whiskey is going to be too overpowering for a sour beer...

This is Sparta! - Maple syrup apple cider

Mmmmm....maple syrup! If you think you will be primarily making ciders you should try this yeast -->Wyeast 4184. I've used a few types of yeast for my cider recipes and this is my favorite so far.

AWS Security Advisory for Amazon EC2

I ran a couple of tests that are out there on the site and they came back that the site isn't vulnerable to the new exploit.

AWS Security Advisory for Amazon EC2

Thanks for sharing this here. This vulnerability is going to affect a lot of people and businesses if they don't upgrade soon. I've already seen a pcap from a test at yahoo.com that shows someone's login information. Not only can someone get login information but private keys as well. If you...

    Tweaking small batches

Yeah, I've done this but usually not with 5 different vessels. I only do two or three at a time but its a great way to do a bit of experimenting. Right now I've got a split batch fermenting. One is my regular Belgian IPA recipe and the other I tossed in Brett Trois to see how things will...

    Ideas....

You can't go wrong with a Wit. Its on my list of styles to try but I need to get a lager going. Haven't been able to do a lager yet but I've got a small fridge I'm going to use as a fermentation chamber. Got a good Helles recipe? maybe after the lager I'll try my hand at doing a Wit.

    Ideas....

I run into this issue so many times. A huge stack of recipes that I'd like to try but trying to figure out what to do next seems to be the hardest part. How about a sour beer? I think the next one I'm going to try to do is a Helles. I'm just waiting for some of my current fermentations to...

Hybrid Belgian Pale Recipe Development - My First Recipt

They seems to be about the same thing just variation in color. Of course they are probably made by different malsters so there will be differences because of that. You could always skip the Brumalt and do a decoction mash. Those are always fun! :D

    Bottle dregs?

I think I'm eventually going to start storing yeast on slants but for now I'm going to keep them in small 4oz canning jars.

Hybrid Belgian Pale Recipe Development - My First Recipt

I think I'd go with with something like what PZ said. Let the yeast and hops stand out. Belgian yeast is my favorite and they have great flavor and aroma. I haven't used wyeast 3522 and most attenuate well so I'd expect it to be a bit lower than 1.011. Personally I think 2lbs of crystal is too...

    BAD IDEA

I'd boil it and toss some yeast in to see how it would turn out! :D I haven't tried storing unboiled wort before but I would think boiling it will kill off anything that's bad in it. Give it a go and let us know how it turns out.

    Imperial Wit - Feedback please!

Will the honey be going int the boil or will it be going in at high krausen? If you are looking for honey flavor it will be best to put it in at high krausen. I've used honey before and it will ferment out completely and it still might at high krausen but that will probably be your best bet...

    Old bottles?

Nice bottles! Are there any dates, numbers or markings anywhere? They should be marked with something that will tell you the date which might give you some more information about the bottles.

    Bottle dregs?

I was thinking about grabbing some bottles that have some good Brett in it and others the have brett, lacto, and pedio in them. Anyone have any bad experiences with using the dregs from a bottle? My plan is to mix the Brett dregs from one or more bottles in with Brett B. and Brett C. once the...
