Ok According to their website they can both handle 10% and I've read that is some cases the 05 can handle close to 12%

I am in a bind. Have the whole day Saturday to brew a NEIPA at 8%. My OG should be at 1.072 but I only have 1 pouch of wyeast 1318 (2 months old 66%)but beersmith calls for 3 pouches. I don't have access to another packet before Saturday. I can make a starter without a stir plate but says I need...
