    Rauchbier vs. PB Porter

I think I'd do syrup again if I go that route. I used Hershey's Special Dark and regular in a beer a while back and it was money. I was really stoked about the PB&J idea, but then I started wondering about how well it'd come through. I would prefer to use strawberry puree, but my LHBS only has...

    Awesome beer names?

All my beers have baseball-themed names, many Cubs related: Crooked Numbers Summer Ale High Heat Chocolate Chipotle Ale Seeing (Eye)PA SEA's (wife's initials) Berry Wheat 'Til Next Year Day Game White IPA 8/8/88 Black IPA Disco Demolition Double IPA Pine Tar Stout Okay, maybe not super cool in...

    Rauchbier vs. PB Porter

I only have room in the kegerator for 4 kegs, all of which will soon be full. However, I have 5 kegs. That said, I'd like to go ahead and brew up a batch that I can set aside for a while; I'm not a patient man, so being forced to wait makes this perfect. I need some help deciding what to do...

    Fermenting in buckets

That's basically exactly what I got; the DIPA went crazy for about a day, used a blowoff tube; then moved to airlock and had a little activity but then nothing. The wheat beer took a while to get started, was active for about 24 hours, then done. But it hit FG and the warm, flat sample, was nice...

    Fermenting in buckets

Thanks, it was ambitious but I think I pulled it off. I did both of the more labor-intensive ones on Saturday, as the DIPA had 10.5oz of hops (granted, some of that is for dry hopping) and the Summer Ale includes citrus fruit action. I actually zested and juiced 3 limes, 3 lemons, and 1...

    Fermenting in buckets

So I made the decision to brew 4 batches this weekend, which required the use of some extra vessels. I picked up a couple buckets, due to the lower cost and cleaning ease, but I'm not sure the results are as good as what I get from carboys. Of course, I can't see any activity, so that's a...

    Dry hopping in keg

Awesome, this appears to be the general consensus from my research as well, though I've heard of good results either way. Thanks!

    Dry hopping in keg

Good stuff. I like the muslin bags because they're cheap and disposable, plus they still prevent much debris from escaping. I think I'll maintain my method of weighted suspension rather than get too new with much, but I appreciate any and all feedback. And does temp matter? I will obviously not...

    Dry hopping in keg

Dental floss, good call. Strong and cheap. I had read something a while back, a study, that found that 3 days was plenty. I'm thinking of cutting my total dry-hop bill into halves and doing 2 separate 3-day additions. Also, does the beer's temp matter for the purposes of the dry hopping...

    Wedding beer

I don't have the pictures, but I was asked to supply some beer for my buddy's wedding last weekend and I had a great time getting it all set. I made both a black and a white IPA to sort of symbolize bride and groom and also brought a simple APA to serve as a backup. These folks weren't really...

    Dry hopping in keg

Okay, so I'm going to get ambitious (for me at least) and try to brew 3 batches over the long weekend. Supplying beer for a buddy's wedding totally sapped me, so I've got to replenish. I'm not sure why I've not dry hopped in the keg before, but I'm thinking that's where I'm heading in the...

    S-05 Esters/phenols

I can't say that I'd like to serve it that cold, as I don't think that's the way good beer should be consumed. My main concern is that I'm not much of a Belgian fan, so this just falls too far outside of my comfort zone. The whole process came out of a combination of a couple unseasonably sunny...

    S-05 Esters/phenols

Wow, long time since I posted; crazy busy. Anyway, I brewed up a batch of white IPA that I've had kegged for a couple weeks now. It's for a buddy's wedding, so I haven't bee drinking it, but I sampled some just last night and it seems to have taken on a really Belgian flavor profile. Not that...

    Filtering

Excellent conversation, thanks. I use a paint strainer over a 5-gallon bucket to strain from kettle, but don't use a funnel filter. I cold crash for a couple days prior to kegging as well. I've not used gelatin, but sounds like that might be the way to go in the future. So here's a question...

    Mosaic Pale ale

I get some definite cat pee smells from Citra as well. It's not overwhelming though, and the funk is balanced out well. I had a friend who brewed a Mosaic kit from our LHBS and he said it was really good. Link below is to the store's site, and you can get to the breakdown from there. Ah...

    Filtering

I've been very pleased with the beers I've been turning out lately and all of them I have on tap now are infinitely drinkable. Well, the High Heat Chocolate Chipotle is far from a session beer, but I think the flavors are great and it's gotten good reviews from others. I'm not worried about...

    Zombie Dust clone

Oh, wow, this stuff is so good. I am very pleased with the results now that it's almost fully carbonated. I'm telling you, it's just a nice APA with clean bitterness and a really nice aroma.

    Brewery visits

I'm going to be in SoCal in February, heading from San Diego up to Orange, and I'm looking for some places to visit. I'm flying into SD and then driving up to Encinitas, so I'll actually be pretty close to Stone Brewery and I plan to check that out Monday night. Then I have some meetings...

    Blichmann Engineering

I don't have a counter flow chiller, though that would be nice. I had figured a hopback was a way to simply amp up the flavor addition that would normally be at flameout, but is it better served as dry hop substitute? I'd think that the fermentation would still blow off the aroma a bit. I...

    Blichmann Engineering

Got a HopRocket, plan on using as Randallizer first with Citra for my Zombie Dust clone. Maybe as a hop back in future brewing too.
