    OG too high, already added yeast.

    First you have the Lag phase which is were the yeast start taking in nutrients ...and then the log phase were the yeast start going for it. You did will to get 1.080 you would normally use a big starter around 2/3 litre with a stir plate if possible. I would add some more yeast if slow ...

    Trub vs no trub

    Lov this Post really interesting about Full Trub ferment ....please update us on taste test....would a Fast Fement create more fruit favours ?. Me thinks some trub is a good idea for the yeast .

    Unsealed fermentation experience?

    Bigfoot ale is the best beer I have tried to date was a 2008 bottle ... just WOW . Harvey's of Lewis use open fermentation it's only stopped in this day and age because set up costs are greater it's the CO2 concerns with health and safety . Cheers Matt ... NIGHTSKY Brewery ... future Ales...

    PH meter Probes...

    Cheers Gents , so far for my first post input is great , when I was into aquatics I have a US Pinpoint PH meter ... so could put many different makes on .... have a thick Cole & Palmer trade book with very many probes ... Gel , refillable , Dual Juction etc so many to go for . Many thanks Matt
