Maple Sap

I see some references on the web to a PH range of 6.0 - 7.3. I think it would be nice to know the Calcium level but could assume it to be low.
As long as your runoff's pH doesn't exceed 6.0 you're fine. The pH of the liquid (I won't say water) doesn't have a lot to do with it because it doesn't have much buffering capability.

I will check pH today (Milwaukee PH56), but cannot check salt/ion concentrations.
 
I'm talking about the sparge runoff - make sure its pH stays below 6.0.
