Dear All,
I'm brewing a Saison for the first time. I usually ferment stronger ales for 14 days without even bothering to measure SG before day 10.
With the Saison, my OG was 1.046 and I was aiming for a FG of 1.004 (ABV 5.5%). I am using Belle Saison Danstar Yeast. I have been fermenting at 25-30C for 6 days now and my SG is already down to 1.004. This is my question: should I wait and see if the SG drops even further or should I bottle now and allow for a few weeks of secondary fermentation and conditioning in the bottles?
Thanks,
Michael

If it were me, I'd check it again in 3 days. If it's still at 1.004, I'd consider it to be done.

it really depends on how thin tasting you want it, 1.004 is already very thin, I wouldn't want my beer much thinner but thats up to you

Saisons that low generally don't taste thin.... But I'd wait. Saison yeasts are very highly attenuative! Better wait a few days more than face exploding bottles.

I Thank the 3 of you for your advice! I'll wait a couple more days...
