Are there any defoamers out there to keep down the yeast starter foam and or tricks. I assume something mineral oil based would work but not sure.
 
fermcap-s is the best. Only takes a couple drops.
 
Doesn't fermcap form a layer on top of the wort? Mineral oil definitely would. And since yeast need oxygen to propagate, would something that sits on top of the wort, impede or prevent oxygen transfer?
No, fermcaps is a protien that breaks down molecules that cause foam.

Works really good for ovoiding boil overs from pasta and potatoes too :D
