tell me what you think of this recipe
10 lb. 2-row
2 lb. caramel crystal 40
1 lb. caramel crystal 60
2 oz caramel crystal 120
2 oz. chocolate malt
1 oz. Hallertauer at 60
.5 oz. Nugget at 15 min

.25 oz. cinnamon stick (secondary 8 weeks)
.13 oz. nutmeg-ground fresh (secondary 8 weeks)
4 oz. oak chips (secondary 8 weeks)
8 oz. Johnny walker red label (secondary 8 weeks)

I guess thats what your trying for but the Nugget has a mango melon flavor? not sure about that mixed with your secondaries otherwise looks good

If I were going to put that much spice in the mix, I'd avoid a flavor hop. No need to add one more, potentially distracting flavor. It could be good but adding additional bitter to a spice ale doesn't sound appealing to me. I'd go with a single neutral hop addition at 60 mins, thinking Magnum, then lay the flavors over a relatively clean but in this case relatively sweet beer (you do have a lot of crystal working in there).

And don't waste the whiskey - oak provides all its flavor anyway. Unless you want the additional alcohol.

It's possible the whiskey is there to sanitize the oak chips. I usually just dump it all in.

Agree on the sanitation but use cheap vodka instead. There's nothing magical about whiskey flavor, it's purely toasted oak.
