Mixing pre-hopped LME kits and something to "smooth" it out?

I saw a Munton's Premium Mexican Cerveza beer kit for $5 at my LHBS. It was still fresh but closing in on the expiration date. I passed since I brewed this once in the past and found it too hoppy and too bitter for my taste. Now they are giving them away, one month short of the expiration date. I picked up two free cans for a hoppy beer loving friend to try. Then I got to thinking.... could I take a can of this and add some un-hopped light LME or DME and brew something lighter? Or would end up with something that no one liked? I probably will just give the cans away but I am curious. I am pretty much an all-grain brewer now and have some great results with popular recipes that I have found on line. If my "hybrid" turned out awful, I would have a lot of liquid to pour down the drain. Any thoughts?
 
I can't comment about brewing with these kits, but I have found that these nearly expired kits are a cheap source of extract for making yeast starters.
