Brut”ish” IPA

It’s a very interesting idea. I’d love to see you try it but I have no idea what that mix of yeasts will do.

My guess is that you’d be better off going all in with whatever yeast and just adding that slasher enzyme, whatever it’s called. Regardless what you do, I’m getting the popcorn and will be following along.

I think I would start with 05 then add the champagne yeast after a couple of days to help it finish lower.
