Hello,

I'm doing this recipe BIAB 5 gallons (see link below) and I opted out for using the packet lemon zest (1 Oz) from the store and was suggested to use from a fresh lemon.

How much Zest can you suggest or if there is a calculator for a 5 gallon batch. 1 lemon? How many Oz ?

Thinking around adding 0.2 grams about 2 1/2 lemons.

A while back I had zested a ton of oranges for a sour orange creamsicle ipa. I'd have to look it up, but I do remember googling for how much zest you get from an orange and calculating from there.
Rough guess? Probably 3-4 lemons to get an oz of zest
 
Just quick searched, and found 1 medium size lemon gets about 1 tbsp of zest or 6 grams. So probably 5 lemons will get you about an ounce of zest
And dont go too deep, you want to avoid the white pith of the peel

You could google "convert dried lemon zest to fresh". That's what I would have to do to answer your question. But I'd trust JA's answer, too.
