    A Kölsch was my very first beer I ever tried to brew at home from a kit and it turned out pretty poor. I'm thinking about doing another one properly, all-grain. I do love the style.

    Traditionally, yes. But I do like Leinenkugel's Canoe Paddler which is a Kölsch style ale. I guess I didn't need to say it was from Cologne, but I was practicing my German! ;)

    That's 100% true, Trialben. I start with the lever fully pressed and then half press it at the top for head....this one is creamy though and no matter what I do I get that much head in the pour. It settles down after a minute though. The picnic spout is good but no replacement for a true taphead.

    Well, it isn't an exact science...and for the record it is my first poll. I assumed there would be some folks who have hard and fast rules (which it seems there are), and, to your point, there are folks that would say it depends.
